The Challenge

Traditional water-based sauces often caused sogginess, and dry seasonings risked clumping in humid environments. They asked Griffith Foods to solve their key constraints:

Our Approach

We introduced our Custom Culinary® Buttery Garlic Flavour Glaze, a proprietary oil-based liquid system that enhances flavor, preserves crispy texture. It was able to:

  • Maintain crispiness by eliminating water from the formulation.
  • Simplify operations with a “less is more” application—only a small amount was needed for maximum impact.

Our team worked closely with the culinary team to validate performance across fries and mozzarella sticks, ensuring consistency and ease of use across hundreds of locations.

  • Menu Innovation: Garlic Parmesan Fries and Breaded Mozzarella Sticks transitioned from Limited Time Offers (LTOs) to core menu items.
